Everyday this goes through my head and everyday I do the best that I can in choosing to do the right thing, even when it's the hardest thing to do and most people choose otherwise.

So true😋.... And again makes me think of my father 🤔

Over the years and in another life, I've had people tell me that it's expensive to eat healthy. Aside from all the other health benefits and like most things, it's all about choices. MEAL ONE: The other day I roasted a chicken, from frozen I might add, roasted my veggies (carrots) and then squished the small pototoes slightly and sprinkled with olive oil and garlic spices and baked them to crisp them up a bit. I also added a salad. This meal cost me approx $15 and fed three of us. MEAL TWO: I kept the drippings of the roasted chicken and boiled the carcass to make broth. Picked off the meal and drained the chunks of onion and spices (rosemary and thyme from when I had baked the chicken) and placed it all back into the pot. I added two chopped carrots and celery as well as one cup rice. Next I made a batch of baking powder biscuits (with cheddar cheese). This fed five of us as my kids each had a friend over. So for about $25 I made 8 meals that were healthy and wholesome. Nothing came from a box and best yet my kids and extended kids, loved it. There is no excuse. There are only choices. I'm a single mom who makes a decent living but I am by no means in a position where waste is ok, nor do I think it should ever be. We are a wasteful society who eats from a box marketed and grown for the benefit of a $$$.
